- 4 medium sized baked potatoes
- 4 teaspoons margarine
- 4 oz cheddar cheese
Chili
- ½ lb lean ground beef or ground turkey
- 16 oz. can kidney beans, undrained
- 2 teaspoons chili powder
- No-salt-added tomato puree

Preheat oven to 400°F. Punch holes in potatoes with fork
and place in oven. Bake for 2 hours.
Chili
1. Brown ground meat. Drain excess fat from meat.
2. Add chili powder, beans with liquid, and tomato puree.
3. Bring to a boil, reduce heat, cover and simmer 10 minutes,
stirring occasionally.
4. After potatoes are finished baking, cut them in half and
place 1 teaspoon of margarine in each potato. Place ¼
cup chili on each potato and top with 1 oz cheese. |
