Three Louisiana Sea Grant and LSU AgCenter Fact Sheets have recently been written or revised about proper handling recommendations to maintain good eating quality in seafood. Written for the offshore recreational fishermen in the Gulf of Mexico and the seafood consumer at home, these handling recommendations are based on seafood science and technology and best commercial practices in the seafood industry.

Handling and Freezing Fish and Seafood at Home
This fact sheet describes basic seafood quality concerns and contains useful tips to be used at home to maintain quality in fresh and frozen fish and seafood.

Handling Offshore Catch on Board
This fact sheet describes basic on board handling recommendations to prevent quality loss while at sea during offshore recreational fishing trips. This publication also details additional handling practices, based on commercial tuna handling, that can potentially be used on board to maintain high freshness and eating quality.
